New England Boiled Dinner

This recipe was handed down by Uncle Shel Holdaway's mother.  It was Shel's favorite meat and vegetable dinner. - Aunt Bessie Holdaway

Uncle Shel and Aunt Bessie
Ingredients - Serves 4. 
1 (3 lb pot roast)
8 small onions
8 small potatoes
8 carrots
Dumplings - recipe below
Steps
  1. Cover roast in large pot with water and boil 3 to 4 hours.  When nearly done, add vegetables and cook until done.
  2. Top with mixture from dumpling recipe below.   For Gluten-Free Version - omit dumplings, or make them with gluten-free flour.
Dumpling Recipe:  
2 cups self-rising flour
1 & 1/2 tbsp melted butter
1 egg (beaten),
1/3 cup milk
  1. Add eggs, milk, and butter to flour.  Mix and drop by tablespoonfuls on top of meat and vegetables.  
  2. Cook covered for 20 minutes on low heat.
