Flourless Brownies

 8 oz semisweet chocolate, broken into pieces
1 cup butter, cut into 1" pieces
1 cup sugar
1/4 tsp cinnamon
1 tsp orange zest
1 tsp vanilla extract
3 eggs, slightly beaten
1 & 1/2 cups almonds, ground fine
1 cup walnuts, toasted and chopped
1 tbsp cocoa powder

  1. Chop walnuts and toast on a baking sheet in a 325 degree oven for about 5 or 6 minutes, stirring once and peeking to prevent burning.  Set aside in a bowl to cool.
  2. In a pan over low heat, stir chocolate and butter pieces CONTINUOUSLY until they have both melted.  As soon as they have melted, remove pan from heat.
  3. Stir in sugar, cinnamon, zest, and vanilla.  Set aside to cool.
  4. Process almonds in a food processor to grind them.  Add them to the bowl of chopped walnuts.  Add eggs and stir together to combine.  Stir in the chocolate mixture.
  5. Grease a 9" square baking pan and dust with cocoa, if you have some.   Put the brownie batter into the dish and bake at 325 degrees for 25 to 30 minutes.  The brownies will seem a bit gooey, but will set up as they cool.  When cool, slice and top with whipped cream or ice cream.
