Parsley Orange Pesto (POP)

You can make pesto with just about any green herb.  I found an enormous bunch of parsley at the fruit & veggie stand one day - cheap!   This recipe is the result.  Yummy with pasta or as a sauce on chicken.  Heck, I just spread it on bread!

2 cups flat leaf parsley (pack it down in the cup) and no need to pre-chop
2 cloves garlic, chopped
1/2 cup toasted walnuts (Just stick them in the oven for about 4 or 5 minutes.)
1/2 orange - zest and juice
about 6 tbsp of olive oil - more if necessary
salt and pepper to taste

**If you don't have a food processor, don't despair.  We moved and I still haven't found the box with mine.  I used a blender - a little more work, as you have to keep pushing the mixture down into the blender, but it worked out just fine.  Some people prefer the smoothness that a blender gives the pesto, as opposed to the more gritty texture of using a food processor.
  1. Add parsley, garlic, walnuts, orange zest and juice to your blender or food processor.
  2. Pulse or blend until mixed a bit.  Drizzle olive oil into the blender or processor while mixing.  Stop every now and then to mix around with your spatula.
  3. Process until you like the texture.  Add salt and pepper to taste.
