Pico de Gallo

gluten free / vegan
Dip in your tortilla chips, slather it on tacos, warm it up to top fish or meat!  Heck, just eat it with a spoon!

3 cups sweet onions or purple onions, chopped small
3 cups tomatoes, chopped small  (I like to use Romas.)
1/3 cup fresh cilantro, chopped
2 avocados, diced ( if you don't have ripe ones, just omit)
​pinch cumin
juice of 2 limes
salt and pepper to taste
1 jalapeño pepper, chopped fine (optional - if you like it very spicy)
  1. Stir everything together and chill.
  2. Serve with tacos, tortilla chips, or as a topping.
