1 tbsp butter 2 eggs 1 cup milk 1 cup flour 1 tsp salt
Use butter to liberally grease a muffin tin. Place tin in a preheated 425 degree oven until it is hot - about 3 to 4 minutes.
In a bowl, beat eggs and pour in milk.
In a separate bowl, sift together flour and salt.
Stir flour and salt into the egg and milk mix.
Remove hot muffin tin from oven and carefully pour batter in. The batter will be very thin and that's normal!
Bake for 25 to 30 minutes.
Serve hot with butter and jam or honey.
This makes about 10 popovers. Be sure to place a couple of tablespoons of water in the two muffin tin spaces that you don't use. This will keep the muffin tin from warping.
