Port Strawberry Dessert

Ice cream, whipped cream, and strawberries - YUM!  Always use fresh strawberries for this.  It does contain alcohol, though most will burn off in cooking.  Just be aware.

3 cups fresh strawberries, sliced (Keep aside 5 or so slices for garnish.)
1 cup ruby port wine
1 cup red wine - (Cabernet or Malbec is a good choice.)
1/2 cup sugar
1/2 orange, sliced
1 lime, sliced
1/2 teaspoon cinnamon
3 cups vanilla ice cream
whipped cream

  1. Wash strawberries, remove hulls and stems and slice lengthwise.  Keep 5 or 6 slices aside for garnish later.
  2. Heat port and red wine in a saucepan over medium heat, bringing to a boil.  Stir in: orange, lime, sugar, and cinnamon.  Heat until boiling again, then set aside to cool for about 45 minutes.
  3. Strain sauce in a mesh strainer (not a colander) and refrigerate until time to serve.  Any leftover sauce will be fine in the fridge for a week or so.
  4. For serving, put a large scoop or two of ice cream in a glass or bowl.  (I like to serve this in wine glasses, but you can certainly use any sort of glass dish or bowl.  Tastes just the same if you use an old coffee cup.)
  5. Spoon sliced strawberries over the ice cream, then top with some of the wine sauce.  Add whipped cream and a sliced strawberry or whole one to garnish.
