Powdered Mini Doughnuts

These don’t look like doughnuts, but they taste like those yummy powdered cake doughnuts I used to buy in a little package of 5 or six, when I was little.  I loved those things!
You'll need a mini-muffin pan for these.  Don't use cupcake liners.
Ingredients Cake Doughnuts
1/3 cup butter, room temperature
1/2 cup sugar
1 large egg, at room temperature
1 tsp vanilla
1 and 1/2 cups all-purpose flour
1 and 1/2 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp salt
1/2 cup milk
Powdered Sugar Topping
3 Tbsp butter
1 cup powdered sugar

Doughnut Steps
  1. Preheat oven to 350° F.
  2. Grease mini muffin pan with butter or spray with no-tick spray.
  3. Mix butter and sugar until creamy - about 3 minutes.
  4. Mix in egg and vanilla.
  5. Add the flour, baking powder, cinnamon, and salt. Beat on low speed, then add milk and mix a bit.
  6. Carefully spoon the thick batter into a mini muffin pan, filling each space about 2/3 full.
  7. Bake for 12 minutes and check for doneness - by inserting a knife or toothbpick into the middle of a doughnut and see if it’s clean when removed.  If not, cook about 2 minutes more and check again.
  8. When done, cool in the pan for a few minutes, then transfer to a plate.
Powdered Sugar Topping
  1. Put powdered sugar in a bowl.
  2. Melt butter in microwave or on stovetop - don’t burn.
  3. Using tongs or a fork, dip the doughnuts (one at a time) in the butter. Then dredge through the powdered sugar until well coated.
  4. Let cool on a rack.
