These don’t look like doughnuts, but they taste like those yummy powdered cake doughnuts I used to buy in a little package of 5 or six, when I was little. I loved those things!
Doughnut Insructions
- Preheat oven to 350 degrees.
- Grease mini muffin pan with butter or spray with no-tick spray.
- Mix butter and sugar until creamy - about 3 minutes.
- Mix in egg and vanilla.
- Add the flour, baking powder, cinnamon, and salt. Beat on low speed, then add milk and mix a bit.
- Carefully spoon the thick batter into a mini muffin pan, filling each space about 2/3 full.
- Bake for 12 minutes and check for doneness - by inserting a knife or toothbpick into the middle of a doughnut and see if it’s clean when removed. If not, cook about 2 minutes more and check again.
- When done, cool in the pan for a few minutes, then transfer to a plate.
- Put powdered sugar in a bowl.
- Melt butter in microwave or on stovetop - don’t burn.
- Using tongs or a fork, dip the doughnuts (one at a time) in the butter. Then dredge through the powdered sugar until well coated.
- Let cool on a rack.
