Roasted Brussel Sprouts

gluten free / vegan
Let me just say, 'I usually detest Brussel sprouts.'  That being said, I love, love, love them cooked this way!

Ingredients
Brussels sprouts, washed, trimmed, cut in half if large; I leave the small ones uncut.

olive oil
salt and pepper to taste
sprinkle of paprika
Steps
  1. Pat Brussel sprouts dry.  Put them on a cookie sheet or in a  large cast iron skillet and drizzle all over with plenty of olive oil, then salt, pepper, and paprika.  Toss to coat and arrange in a single layer.
  2. Bake for 15 to 20 minutes in a preheated 400° F oven.  Stir them once halfway through cooking.   Check after 10 minutes.  Don't let them get too done - they will be bitter!
  3. Serve immediately.
