Rocky Road Candy

Easy and delicious chocolate, marshmallow, and nut candy!

Ingredients  - Makes about 4 dozen.
1 (6 ounce) package semi-sweet chocolate chips
1 (1 ounce) square unsweetened chocolate
1 tablespoon butter
2 eggs
1 and 1/4 cups confectioner's (powdered) sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
2 cups salted peanuts (I like to use the food processor.)
2 cups miniature marshmallows
Steps
  1. Melt chocolate pieces, chocolate square, and butter in a large saucepan over low heat, stirring until smooth.  Remove from heat.
  2. In a mixing bowl, beat eggs until foamy.  Mix in the sugar, salt, and vanilla.  Slowly blend in the chocolate mixture.
  3. Stir in peanuts and marshmallows.
  4. Drop by teaspoonfuls onto waxed paper.  Chill for 2 hours or until firm in refrigerator.  Store in refrigerator and remove just before serving.
