Shrimp and Broccoli Casserole

Two of my favorite ingredients, plus cheese - pure comfort food!

1 cup shrimp, boiled and chopped
2 bunches fresh broccoli, cooked and drained
1 onion, chopped
1 clove garlic, minced
1 tbsp olive oil
2 cup milk, warmed
1 cup sharp Cheddar cheese, shredded
1/4 cup almonds, sliced
3 tbsp butter
1/2 cup seasoned bread crumbs
3 tbsp flour
1/4 tsp paprika
salt & pepper to taste
Steps
  1. Sauté onions and garlic in olive oil until just tender.
  2. Chop broccoli flowerets and cook in a small amount of water of medium heat for about 3 minutes.  Drain well and put in a greased 13x9-inch baking pan.  Stir in onions and garlic.
  3. In a saucepan, melt the butter over medium heat and stir in the flour, stirring until smooth.   Remove from heat and add warmed milk.
  4. Return mixture to heat; cook and stir until thick and smooth.
  5. Stir in seasonings, shredded cheese, and chopped shrimp.  Cook for about 2 more minutes, stirring constantly.
  6. Sprinkle almonds over the broccoli (Remember it?  You left it in the pan!)
  7. Pour cheese mixture over the broccoli and top with bread crumbs.
  8. Bake for 25 minutes or until light brown in a 350° F oven.
