Three Cheese Macaroni

This is NOT your mama's mac & cheese!

1 pound macaroni pasta
1 cup Parmesan cheese, grated
1/2 cup ricotta cheese
1/2 cup mozzarella cheese, grated
3 tbsp butter
1 & 1/2 cups half & half
1/4 tsp cayenne pepper
1/4 tsp nutmeg
salt & pepper to taste
  1. Cook macaroni pasta until al dente (still a little firm), not soggy.  Drain and rinse with cold water.
  2. Butter a 13 x 9 inch baking dish.  Put drained macaroni into the dish and stir in the butter.
  3. Next stir in all the cheeses and mix together well.
  4. In a small bowl, stir together half & half, nutmeg, salt, pepper, & cayenne pepper.  Pour mixture over pasta and stir.
  5. Bake for 20 - 25 minutes at 400 degrees or until lightly browned.
