Tiny Pecan Pie Tarts

These are just fool-proof and so delicious!  Great to make the night before a party or holiday get-together!

Tart Shell Ingredients
1 (3 ounce) package cream cheese
1/2 cup butter, softened
1 cup all-purpose flour
Tart Shell Steps
  1. Combine cream cheese and butter in a small bowl; stir until smooth.
  2. Add flour, mixing well.
  3. Chill dough about 1 hour; roll into 24 (1-inch) balls.
  4. Place in miniature muffin tins, shaping each into a shell.
Filling Ingredients
3/4 cup packed brown sugar
1 tbsp butter, softened
1 egg
2/3 cup chopped pecans
dash of salt
2 tsp vanilla
unbaked tart shells (recipe included)
Filling / Baking Steps
  1. Combine sugar, butter, egg, salt, and vanilla in a small bowl.
  2. Beat at medium speed until just smooth.  
  3. Stir pecans into filling.  
  4. Fill each tart shell about half full, as the mixture will rise in baking.
  5. Bake in 325° F oven for 25 minutes or until they are lightly browned.  Don't over bake!
  6. Let cool then remove from muffin tins with a knife.
