Tres Leches Cake
​(Mexican - Three Milks Cake)

​I love this cake.  It's moist and so good for just about any holiday.  My niece, Courtney, even had one for her wedding!

Ingredients - Cake batter
1 & 1/2 cups cake flour
1 teaspoon baking powder
1/2 teaspoon salt
​pinch cinnamon (optional)
1 stick (1/2 cup) butter, at room temperature
1 cup sugar
5 eggs
1 & 1/4 teaspoons vanilla
Ingredients - Glaze of 3 Milks
1 (14-ounce) can sweetened condensed milk     
1 (12-ounce) can evaporated milk
1 cup half-and-half
Ingredients - Topping
2 cups heavy whipping cream
1 cup sugar
1 tsp vanilla
fresh strawberries, blueberries, etc. to garnish

Steps for Cake
  1. Preheat oven to 350 degrees.  Prepare a 13x9” baking dish by greasing with butter and lightly dusting with a bit of flour.  I like to use a Pyrex glass one. 
  2. In a mixing bowl, stir together the flour, baking powder, salt, and cinnamon (optional). 
  3. In a separate mixing bowl, beat room temp butter on medium until it's fluffy.  Turn speed to low and add sugar, then eggs (one at a time).  Finally, add vanilla and mix.  
  4. Slowly add the flour mixture and mix until it's combined, but don't over-mix.  
  5. Put the batter into the pan and spread it with a spatula.  Bake for 20 minutes, then check.  It's done when it's golden and a knife inserted into the middle of the cake, comes out clean.  Remove from oven and let cool for at least 30 minutes. 
  6. When cake is cool, poke holes all over the top with a fork or a skewer, knitting needle, etc.  You'll be pouring the glaze (directions below) over the cake and into the holes.
Steps for Glaze
  1. Whisk or stir well, the two canned milks and the half-and-half in a large measuring cup or a pitcher.  In a 4-cup measuring cup, whisk together the evaporated milk, sweetened condensed milk and the half-and-half.  Then pour the glaze all over the top of the cake and put in the refrigerator for at least 5 hours or even overnight.
Steps for Topping
  1. Mix together the heavy cream, sugar and vanilla until there are low and stiff peaks.
  2. Spread carefully over the top of the cake and chill cake in the refrigerator until you are going to serve it.
  3. Garnish with strawberries, blueberries, or other fruit and serve chilled.
