Turkey Tacos
One of the first recipes on MissCookbook.com - all the way back to 2008 and still one of the favorites!
Necessity is the mother of all cooking! I created these on the fly as a quick and easy breakfast when I had no
eggs in the Fridge. They've since migrated onto dinner. You can also substitute or add ingredients like sausage, olives, just about anything!
Serves 2 - 3
1 tomato, chopped 1 hot pepper, chopped fine (Put on some gloves and don't rub your eyes!) (Use a red bell pepper, if you don't like spicy.) 1/4 to 1/2 onion, chopped chopped fine 1 small clove garlic, minced (If you don't have all the above ingredients, just grab 1/2 cup of salsa, it will be just as good, or better.) 1 Tablespoon olive oil 1 lb ground turkey salt and pepper to taste 1 Tablespoon olive oil 4 - 6 soft flour tortillas 2 Tablespoons tomato paste or 2 Tablespoons ketchup Filling: 1/2 cup shredded cheese handful of cilantro or parsley, chopped fine (Want it really spicy? Add some cayenne pepper or a couple drops of hot sauce. I do it all the time.) |
- Add olive oil to frying pan and cook turkey until about halfway done over medium high heat. Be careful, if it's really lean it will stick, despite the oil. When turkey is half-done, add onions, hot pepper, garlic, salt, and pepper.
- Lower heat to medium and cook, stirring frequently, until turkey is cooked through and onions and pepper are slightly browned. (If you used salsa, cook the turkey with salt and pepper until browned and then lower heat and continue.) Add tomato and tomato paste or ketchup. Cook through until warm.
- I heat my tortillas on a plate covered by a paper towel for about 35 seconds in the microwave for 4 tortillas. You can also just heat them up on a skillet - be careful not to burn.
- Serve It: Put turkey on top of tortilla; add shredded cheese and cilantro. Roll up.
