Ingredients for Salad
1 kilo (2 pounds) red potatoes (small ones)
salt
1 teaspoon mustard
1 clove garlic, chopped fine
1 teaspoon salt
pepper
Ingredients for Lemon & Chive Vinaigrette
4 tablespoons lemon juice
zest of 1 lemon
4 tablespoons olive oil
2 tablespoons chopped chives
4 tops of green onions, chopped fine

Ingredients for Lemon & Chive Vinaigrette
4 tablespoons lemon juice
zest of 1 lemon
4 tablespoons olive oil
2 tablespoons chopped chives
4 tops of green onions, chopped fine
Steps
- Boil potatoes with skins on - bring to boil, then simmer for 15 to 20 minutes. Drain well and then put in a large bowl. (If you couldn't find small red potatoes, just cut the larger ones in half.)
- Make vinaigrette by whisking all ingredients together.
- Pour vinaigrette on the potatoes while they are still hot, then toss.
