Warm  Potato  Salad

gluten free / vegan
Ingredients for Salad
1 kilo (2 pounds) red potatoes (small ones)
salt
1 teaspoon mustard
1 clove garlic, chopped fine
1 teaspoon salt
pepper
Ingredients for Lemon & Chive Vinaigrette
4 tablespoons lemon juice
zest of 1 lemon
4 tablespoons olive oil
2 tablespoons chopped chives
4 tops of green onions, chopped fine

Steps
  1. Boil potatoes with skins on - bring to boil, then simmer for 15 to 20 minutes.  Drain well and then put in a large bowl.  (If you couldn't find small red potatoes, just cut the larger ones in half.)
  2. Make vinaigrette by whisking all ingredients together.
  3. Pour vinaigrette on the potatoes while they are still hot, then toss.
