A very old and easy recipe!
Makes one loaf.
2 tablespoons molasses or honey
1/2 cup warm (not hot) water
1 and 1/2 tablespoons dry yeast (1 and 1/2 packages)
3 and 3/4 cups whole wheat flour
1 tablespoon salt
2 tablespoons molasses or honey
1/2 cup warm (not hot) water
1 and 1/2 tablespoons dry yeast (1 and 1/2 packages)
3 and 3/4 cups whole wheat flour
1 tablespoon salt
- In a small bowl, dissolve the molasses or honey in the warm water, stir in the yeast, and let stand a few minutes until it starts to "foam" and "bubble."
- In a mixing bowl, whisk together flour and salt. Add yeast mixture and start to stir together. You may need to add more warm water (add it a teaspoon at a time), as you want the dough to be sticky and loose. Stir together well.
- Grease and flour a 9" x 5" loaf pan and fill with the dough, smoothing out the top a bit with a greased spatula.
- Cover with a clean dish clothe and let rise in a warm, draft-free spot for about 45 - 60 minutes - until it has just about doubled and reaches or exceeds the top of the pan.
- Bake in preheated 400 degree oven for 45-50 minutes or until the loaf sounds hollow when tapped on the bottom.
- Cool on a rack.
