Ingredients
3 large carrots - peeled and sliced like a skinny French fry
1 large or 2 medium eggs, slightly beaten
1/4 tsp paprika
2 tbsp water
5 - 6 tbsp grated Parmesan cheese
salt and black pepper to taste
Serve with Spicy Curry Aioli (recipe link).
Steps
- Use parchment paper or spray (with non-stick baking spray) a cookie sheet.
- Whisk egg, paprika, and water in a small bowl.
- Put the grated Parmesan, salt, and pepper on a clean plate.
- First dip the carrots in the egg mixture, shake off excess. Then coat with Parmesan and put onto the cookie sheet.
- Sprinkle with the salt and pepper. Bake in pre-heated 400° F oven for 15 - 20 minutes until golden. Add a bit more salt, if needed.
- When done, serve with Spicy Curry Aioli, mayo, or ketchup.
