baked carrot fries

​Ingredients
3 large carrots - peeled and sliced like a skinny French fry
1 large or 2 medium eggs, slightly beaten
1/4 tsp paprika
2 tbsp water
5 - 6 tbsp grated Parmesan cheese 
salt and black pepper to taste
​Serve with Spicy Curry Aioli (recipe link).

  1. Use parchment paper or spray (with non-stick baking spray) a cookie sheet.
  2. Whisk egg, paprika, and water in a small bowl.
  3. Put the grated Parmesan, salt, and pepper on a clean plate.
  4. First dip the carrots in the egg mixture, shake off excess.  Then coat with Parmesan and put onto the cookie sheet.
  5. Sprinkle with the salt and pepper.  Bake in pre-heated 400° F oven for 15 - 20 minutes until golden.  Add a bit more salt, if needed.
  6. When done, serve with Spicy Curry Aioli, mayo, or ketchup.
