I made loaves and loaves of this one summer when our Texas peach trees produced untold numbers of peaches.  Very yummy!

Ingredients
​3 eggs
2 cups sugar
2 tsp vanilla
1 cup melted butter
2 cups fresh peaches, peeled and chopped
3 cups all-purpose flour
​1 tsp baking powder
1 tsp salt
1 tsp baking soda
3 tsp cinnamon
1/2 cup pecans, chopped
Tip:  To peel fresh peaches easily, drop them in boiling water for 15 seconds.  Drain and cool to touch.  The peel will slip right off!
Steps
  1. Grease and flour two loaf pans
  2. Beat eggs just slightly in a large bowl.
  3. Stir in sugar, butter, and vanilla.  Blend.
  4. Add flour, baking powder, salt, and cinnamon. Mix slightly.
  5. Stir in peaches and pecans by hand.
  6. Pour batter into loaf pans.
  7. Bake at 350° F for about an hour, until a knife inserted in center comes out clean.
