Peachy Bread
I made loaves and loaves of this one summer when our Texas peach trees produced untold numbers of peaches. Very yummy!
Ingredients

2 cups sugar
2 tsp vanilla
1 cup melted butter
2 cups fresh peaches, peeled and chopped
3 cups all-purpose flour

1 tsp salt
1 tsp baking soda
3 tsp cinnamon
1/2 cup pecans, chopped
Tip: To peel fresh peaches easily, drop them in boiling water for 15 seconds. Drain and cool to touch. The peel will slip right off!

Steps
- Grease and flour two loaf pans
- Beat eggs just slightly in a large bowl.
- Stir in sugar, butter, and vanilla. Blend.
- Add flour, baking powder, salt, and cinnamon. Mix slightly.
- Stir in peaches and pecans by hand.
- Pour batter into loaf pans.
- Bake at 350° F for about an hour, until a knife inserted in center comes out clean.
