Steps
- Roll out thawed pastry dough on a floured circle. Roll it to a 15-inch circle.
- Slice brie in half (horizontally) into two layers.
- Lift off top layer of Brie. Put the almonds, apricot jam, and parsley in the middle, the replace top layer.
- Put the whole Brie in the middle of the pastry dough.
- Brush the edges of the pastry dough with beaten egg. (Reserve some for Step 7.)
- Pull upsides of the dough to cover the Brie.
- Put upside-down (seam side) on an un-greased cookie sheet. Brush the top with some of the egg white mixture. You can lightly score it a bit with a knife to make a pattern in the dough.
- Bake at 400° for 20 minutes, checking closely to prevent the top from burning.
- Let cool for about 10 to 15 minutes before serving.
