Citrus Chicken

This just turns out perfect every time.  It's my go-to dish.  It's so nice to fix for a small dinner party.  Serve with mashed potatoes and sautéed spinach.

Ingredients
4 large chicken breasts, boned & skinned
1 orange
1 lemon
1 lime
3 tbsp butter
1 or 2 sliced shallots (optional)
2 cloves garlic, minced or chopped fine
1/4 c white wine (optional)
2 tbsp olive oil
salt & pepper
paprika
dried rosemary leaves, chopped or dried oregano
Steps
  1. Wash chicken and pat dry.  Place in Pyrex baking dish.  Don't overlap pieces!
  2. Zest the orange, the lemon, and the lime.  Set zest aside.
  3. Juice the orange, lemon, and lime.
  4. Whisk together in a bowl:  citrus juices, wine, olive oil, salt, pepper, garlic, paprika, and herbs.
  5. Pour citrus mixture over chicken.
  6. Sprinkle top of chicken with zests.  Dot tops of chicken with small pieces of butter.
  7. Cover baking dish tightly with aluminum foil.
  8. Bake at 350° for 30 minutes.  Remove foil, spoon juices over chicken, and bake 10 more minutes.
