Corn Tortillas

Makes about 12 corn tortillas.
2 cups masa harina (It's a type of corn flour.)
1/2 teaspoon salt
1 and 1/2 cups of warm (not hot) water
olive or vegetable oil
butter for eating them immediately!!
  1. Whisk together the corn flour and salt in a mixing bowl.  Add in only 1 cup of the water and stir.  Add the rest of the water (1 tablespoon at a time) until the mixture forms a dough.  
  2. Flour up or grease your hands and knead it just a bit into a ball of dough.  You can do this right in the bowl.
  3. Make about 12 equal pieces of the dough, rolled into balls with your hands.
  4. You don't need a tortilla press, but if you've got one - use it.  Put a piece of plastic wrap or baking parchment on the top and bottom of a dough ball.  Flatten the ball with the bottom of a pan or dish.  Remove plastic or paper and reuse to repeat for each dough ball.  After they're pressed put them on a greased cookie sheet or plastic wrap.  DON'T STACK!!
  5. I use a cast iron skillet, but you can use any skillet.  Heat to medium-high and add one tortilla at a time.  Cook about 10 seconds on each side.  Then repeat for about  45-60 seconds per side.  It should have a few brown spots on each side.
  6. Repeat process for all the dough balls.
