Cream Gravy

Sauces and Gravy
 The traditional gravy for chicken fried steak or biscuits!

Ingredients​
3 tablespoons of the grease and meat drippings from the skillet
     OR   3 tablespoons oil

3 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon black pepper
2 cups milk or cream
*If you're cooking this for the chicken fried steak you've cooked, skip Direction #2. 
**If you're cooking for biscuits or other foods, skip Direction #1.

Directions
  1. Turn skillet to medium-low heat and drain all but about 3 tablespoons of the oil.  (Leave any meat drippings or crumbs.)  Add flour to skillet, stirring constantly until smooth.  Add salt and pepper and continue stirring until the flour begins to brown slightly. (Don't burn it!)
  2. Heat 3 tablespoons oil in a heavy skillet over medium-low heat.  Add flour to skillet, stirring constantly until smooth.  Add salt and pepper and continue stirring until the flour begins to brown slightly. (Don't burn it!)
  3. Gradually pour in 2 cups of milk and stir constantly until thick.  (about 4-5 minutes)
  4. Serve gravy on side or on top of the chicken fried steak!
