Flour Tortillas

Bread, Biscuits, and Rolls
So easy to just purchase ready-made, but so delicious homemade!

3 cups flour
1 teaspoon salt
1 teaspoon baking powder
1/3 cup olive oil or vegetable oil
1 cup warm water
  1. Whisk together dry ingredients in a bowl.  If you're using a stand mixer, combine them in the bowl of your mixer.  
  2. Stir in the oil and water or if using mixer, add oil and water and beat with dough hook about 1 minute at med speed.  When the dough starts to form a ball, stir about 1 minute more, until fairly smooth. 
  3. On a floured surface (counter or cutting board), divide the dough into 16 equal pieces.   
  4. Lightly coat each piece on all sides with flour and roll in your hand into a ball, then flatten.  Place on counter or board and cover with a dish towel or parchment paper to rest about 10-15 minutes.
  5. Roll out each tortilla piece to a 7 inch circle and place separately - don't stack; they'll stick together!
  6. Heat oil in a large cast iron or other skillet over medium heat; don't let it get too hot and smoke.
  7. Put tortillas in the hot pan (separately) and cook about one minute on each side.  It should have a few light brown spots - wait until those appear, then flip.  Don't let them get too stiff; you want them soft.
  8. Place each on paper towels to dry and either eat immediately while warm or transfer to a plastic bag when cool to keep them soft.​
